Roasted Garlic Dressing

Wonderful with seafood or on a salad. Mix in with mashed vegetables.

1 head of garlic
1 tbsp olive oil
1 tbsp oregano or basil or corriander
Juice from 1/2 lemon
1/2 tsp Himalayan salt
2/3 cup olive oil

Cut across the garlic to expose the flesh
drizzle with 1 tbsp olive oil and place in the oven at 200C  for 25 minutes
remove from oven
once cool squeeze the roasted garlic cloves out of their peels and place them in a blender with the remaining ingredients and blend until smooth
