Smoothie Bowls

Smoothie bowls are a delicious new discovery for me thanks to daughter Kate, who is a real foodie with an eye for presentation. I made this one for breakfast and it includes all the essentials, a good source protein, fat and nutrients for a quick breaky on the run, because, let’s face it, you don’t always have time to cook up that big breakfast every day.

Tropical Mango and Pineapple Smoothie Bowl

Serves 1
¾ cup frozen mango
¾ cup frozen pineapple
1 small banana
½ cup coconut coconut milk
¼ fresh mango
1 sliced kiwi
2 dates, sliced
2 Tbsp. shredded coconut
1 tbsp coconut oil
1 tsp macca powder
15g beef gelatin or choice of protein powder
1 tsp cacao powder (optional- gives a chocolate flavour and colour)
Blend frozen mango, pineapple, banana and coconut milk until smooth. Transfer to a bowl and top with the fresh mango, kiwi, dates, and coconut.
