This dish is so delicious! The fish broth concentrates and combines beautifully with the stir fry vegetables and the roasted garlic pumpkin combines so well with the avocado it could be a meal in itself!
1 tbs olive oil
100g good quality steak
1 onion chopped finely
2-3 cloves garlic minced
1-2 stalks of celery chopped (keep a few tops for garnish)
2-3 tablespoons home made fish broth
1 tbs water
1/2 avocado sliced or cubed
1 slice pumpkin roasted with garlic and olive oil for about 45mins to 1 hour till golden
heat oil in a heavy based fry pan or wok on medium to high heat
sear steak on one side and turn
add in the onion until cooked through
add in the garlic and celery and cook for a further 3-4 minutes
turn the pan down to a low heat and add fish broth and simmer gently until the broth concentrates. Add water to deglaze the pan to keep gorgeous flavours you have created!
Plate up beginning with the slice of pumpkin. Lay the steak on a bed of coriander. Drizzle over the pan glaze and some of the stir fry. Place the remaining stir fry and finish off with a couple of celery tops and wala! A very tasty meal that can be eaten at any time of day Enjoy.
