Sweet Caramelised Tender Turkey

If you’re looking for a light, easy meal to eat after a big day or days out over the holidays that everyone will enjoy, this sweet meat dish is amazing. This meal quenches the fresh protein and fresh vegetables cravings so common during the festive season with extended travel, parties and eating out a lot. The secret to the flavour is to season and cook the onion well before you begin adding in the rest of the ingredients.

approximately 2 tbsp coconut oil
1 onion, finely chopped
1 tsp mineral salt and ground black pepper  (to taste)
3 cloves of garlic, crushed
5cm piece of fresh ginger, grated
1 or 2 mushrooms, finely chopped
2 medjool dates to taste, pureed or finely chopped and crushed
500g turkey, diced thigh fillet
1 tsp mineral salt and ground black pepper (to taste)
juice of 1 lime (to taste)
approximately 1/4 cup water to deglaze the pan

Heat coconut oil in heavy based frypan or wok to medium high heat
Add onions, salt and pepper and saute till onions are soft and caramelised.
Add in garlic, ginger, mushrooms and date and continue to saute until all ingredients are cooked through and aromatic.
Set aside the onion mixture in a small bowl.
Add a little more oil into the pan if necessary and stir fry the turkey pieces in two batches, until meat is browned on both sides and cooked through
Add the onion mixture back into the pan with the turkey and combine well in the pan.
add a little water to deglaze the pan and then on a reduced heat allow the liquid to condense to intensify the flavour. (I was tempted to use arrowroot flour to thicken at this point but very glad I did not).
squeeze over lime juice to add the sour

serve with a generous serve of lightly steamed vegetables
