Finding a new spice to add is very exciting indeed. Poking around specialty grocery stores uncovered sumac powder, ground from the deep red berries of the sumac bush, native to the Middle East and often used in Mediterranean cooking! Sold! A quick google and the following adapted Middle East inspired recipe was a hit with everyone, the kids described it as barbeque chicken, winner!
Sumac Chicken Pieces
- 2 garlic cloves, crushed
- 2 teaspoons sumac
- 2 teaspoons chopped thyme
- Grated zest of 1/2 lemon
- 2 tbsp lemon juice
- 2 tbsp olive oil
- 1 tablespoons pomegranate molasses
- 4 chicken breast fillets
Combine garlic, sumac, thyme, lemon zest, lemon juice, olive oil, molasses and salt and pepper in a shallow dish. Add chicken and turn to coat. Set aside to marinate.
Preheat a barbecue or heavy based pan to medium-high. When hot, add chicken and grill for 3-4 minutes each side until cooked through. Leave chicken to rest before serving with your favourite side.
